Licensing
The Environmental Health Division manages the licensing and permitting of all businesses that include any food service, food processing and food delivery operations. Retail tobacco sales operations are also licensed. No business may operate without a valid license.

Training and Certification
The Department's Environmental Health Practitioners advise and assist food establishment operators on proper sanitation practices and provide food safety training sessions to food handlers as needed. The State of Illinois Food Service Sanitation Manager Certification Course is offered periodically.
Inspections
Food Protection Program activities include periodic inspections of food service establishments serving food, such as restaurants, grocery stores, schools, nursing homes, hospitals, church kitchens, temporary event food vendors, as well as food processing plants, food vending machines and food delivery vehicles. Reinspections are made when necessary. All suspected cases of foodborne illness are investigated to determine the cause and to prevent a recurrence.
